Pan Seared Swai

Lazy days usually call for fish, so I'm making fish today and keeping this post short. It's so easy to make a great fish dish with a light seasoning and popping it into the oven or pan searing it. Swai doesn't have a fishy flavor, so for me, lightly seasoning it is the way to go. Pair this with last week's Quinoa Summer Salad recipe and you have a delicious meal in minutes.

Yield: makes 2 servings

2 swai fillets
ΒΌ teaspoon sea salt
black pepper
garlic powder
1 tablespoon coconut oil
Lime wedges (optional)


Season swai fillets on all sides with sea salt, black pepper, garlic powder and paprika. In a skillet over medium high heat, heat coconut oil. Place swai fillets in the heated skillet and cook for 4 minutes, gently flip the fillets and cook for another 4 minutes.

Remove fillets from skillet and place on a paper towel lined platter to soak up the excess oil. Place the fillets onto individual plates with lime wedges and serve with sides of rice and veggies or with our Quinoa Summer Salad.
