Hello Hello and Happy Fall! I know, I know, it has been a few months since my last recipe blog post. I was a little busy with orders and events this past Summer and now with the Summer rush over I finally have some time to work on sharing a few recipes with you guys. I love avocados and they were a regular grocery item in our home this past Summer since there were always great deals for them at our local grocery store. The hubster loves having breakfast sandwiches during the weekend and one of my favorite ways to make his breakfast sandwiches is to slather them with spicy guacamole. I made a few different variations of guacamole during the Summer, but this one that I'm sharing with you guys today beats them all. I go through weird periods of obsessing over different food items and recently one of those foods is sun dried tomatoes in olive oil. I am also obsessing over shitake mushrooms lately. Anyway, back to the sun dried tomatoes. I love the smoky tartness of the sun dried tomatoes and the oil it's marinated in makes it perfect for a quick pasta dish or like today's recipe, throwing a handful into some spicy guacamole.
Spicy Guacamole with Sun Dried Tomatoes
Yield: 2 servings
1 ripe avocado
½ teaspoon garlic powder
¼ teaspoon fine sea salt
Juice from half a lime
2 jalapenos, roughly chopped
6 tablespoons sun dried tomatoes in olive oil, roughly chopped (slightly drained from the olive oil)
In a small bowl combine avocado, garlic powder, sea salt and lime juice. Mash the avocado and mix to incorporate the ingredients. Mix in jalapenos and sun dried tomatoes. Enjoy it with some tortilla chips, Mexican food or a breakfast sandwich!
