Cheesy Garlic and Scallions Pull Apart Bread

Have I ever mentioned how much I love bread? Well, I do! I LOVE bread. And cheese (lots of cheese!). And garlic. And scallions. If you happen to love all of these scrumptious things too, then this post is definitely for you. I am a HUGE garlic bread lover but I have found that adding cheese and scallions just takes it to the next level and it's AMAZING!

Cheesy Garlic and Scallions Pull Apart Bread

Yield: serves 8


Ingredients:

FOR THE DOUGH

1 envelope active dry yeast
1 teaspoon sugar
¼ cup warm water
1 ¼ cup warm milk
1/3 cup butter, melted
2 large eggs
1 teaspoon salt
5 cups all purpose flour

FOR THE CHEESE MIXTURE

1 ¼ cups grated cheddar cheese
1 cup grated mozzarella cheese
½ cup grated parmesan cheese
5 garlic cloves, minced
3 stalks scallions, roughly chopped
1/4 teaspoon salt
1/2 cup butter, melted


Directions

In a large mixing bowl, combine the sugar, warm water and warm milk. Dissolve the yeast in the milk mixture; let it sit for 5 minutes. Add the melted butter, eggs and salt and 3 cups of flour. Beat on medium speed for 3 minutes. By hand, stir in the remaining 2 cups of flour to form a firm dough.

Turn the dough onto a floured surface and knead until smooth and elastic, about 5-6 minutes. Form dough into a smooth ball and place into a greased bowl, turning once to grease the top. Cover with plastic wrap and let it rise for 1 hour.

While it's rising prepare the cheese mixture. In a large bowl combine the cheddar cheese, mozzarella cheese, parmesan cheese, minced garlic, scallions and salt; set aside.

Grease a 10 inch spring form pan, wrap the bottom with foil and set aside.

Punch the dough down very gently to allow the air bubbles to release. Pull apart pieces of dough and roll into balls, about 1 inch in diameter. Lightly coat each ball in flour and mix it in with the cheese mixture. Using your hands, lightly toss the balls of dough and cheese together. Pour the melted butter over the bread and cheese mixture. Using your hands, toss it ever so gently to incorporate the butter. One by one, place the balls of dough into your prepared baking dish. Cover lightly with plastic wrap and let it rise for another 45 minutes.

Preheat oven to 350 degrees F. After 45 minutes of rise time bake in preheated oven for 45-50 minutes. Remove from oven and let cool for 5-10 minutes.

You may cut the bread into slices or let everyone pick off the cheesy pieces themselves.
