Eggnog Streusel Muffins

This week and next week will be very busy for me so I baked up a batch of these delicious eggnog streusel muffins for me and the little one while we go about our busy schedule. They are sweet with a great consistency and the streusel adds an amazing crunch for texture.

Eggnog Streusel Muffins

Yield: makes 10 muffins


Ingredients:

For the muffins:

1 ½ cups all purpose flour
¾ cup granulated sugar
pinch of salt
2 teaspoons baking powder
½ teaspoon ground nutmeg
¼ cup vegetable oil
½ cup eggnog
1 egg

For the streusel:

½ cup brown sugar
1/3 cup all purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
4 tablespoons unsalted butter, cut into small cubes


Directions:

Preheat oven to 400 degrees F. Line muffin tin or cupcake pan with cupcake liners or spray with cooking spray. Set aside.

For the muffins:

In a mixing bowl, combine flour, granulated sugar, salt, baking powder, and ground nutmeg. In a separate bowl combine vegetable oil, eggnog and egg. Add the wet ingredients to the dry ingredients and stir to combine. Spoon 2 tablespoons sized mounds of the batter into prepared baking sheet.

For the streusel:

Combine brown sugar, flour, cinnamon and nutmeg in a small bowl. Mix in butter until mixture resembles coarse crumbs. Sprinkle generously over the muffins and bake in preheated oven for 16-18 minutes. Let cool slightly before serving.
